FRYING PAN

A perfect pan for frying fish should be two things: first of all, non-stick, because fish is fragile and sticks easily. And secondly, it should be close to the shape and size of the fish, so there are few uncovered spots where the butter or oil will burn. It's an added advantage that non-stick pans take less butter or olive oil. Our pans from Cuisine Cookware are made in Italy, extra heavy weight and triple-coated non-stick, inside and out. No matter how hot the pan is, the handle always stays cool.

Three sizes: 8 1/2" for $19.99, 10" for $26.99 and 12" for $31.99..

OXO'S FISH TOOLS

Oxo's fish tools all have non-slip handles; the oyster knife is $8.99, the clam knife is $8.99, and the shrimp deveiner is $6.99. To turn delicate fillets, these flexible Wusthof spatulas are the right tools. $29.99 and $28.99.

FISH PLIERS

S
eparating the bones from the fish is a tedious job that requires precision. The fish pliers from the German manufacturer, Messermeister, and fish tweezers make the job easier.

Tweezers, $12.99. Pliers, $29.99.
OYSTER KNIFE

One of the most intimidating tasks in the kitchen is opening oysters or clams. But once you've had a lesson or two from someone who knows what they're doing -- like the men who work in Joe Catalano's Fish Market -- you will want to do it yourself. And we have the tools: This oyster knife from Wusthof is

$39.00.

STOVETOP SMOKER

S
moke fish and shrimp indoors on your stove or in your fireplace with our stovetop smoker. It's made of heavy-gauge stainless steel with a handle designed not to transmit heat, measures 15" long, 11" wide and 3 1/2" deep, and comes with four varieties of wood chips.

$59.99.
FISH POACHER

If you don't poach fish very often, you can improvise with a skillet, a roasting pan or an oval saute pan. What matters is that it is deep enough so the fish can be covered by liquid. But the most convenient piece of equipment is a fish poacher; the advantage is that the rack keeps the fish from falling apart. Our stainless steel poacher is 18" long and has a poaching rack with detachable handles.

$69.99.

BAMBOO STEAMER

T
his inexpensive bamboo steamer from Joyce Chen lets you steam the fish and the vegetables to go with it. The steamers stack on top of one another allowing you to put different foods in each one.

$17.99.
